Everything began with the Timanfaya Volcano, which erupted in 1730 and left the island under ash and lava for a full 6 years. Instead of abandoning the island, they tried to clean up the black ashes, but the layer was so thick that it was impossible. Step by Step Volcanic Viticulture: How Does the System Work?

Giant pits (Hoyos): Large pits in the shape of an inverted cone, 1 to 3 meters deep, are dug by excavating the black pebble layer on the surface. Vine seedlings are planted directly into the fertile soil at the bottom of this pit.
Moisture shield and heat control: On an island where it hardly ever rains, black ash absorbs the moisture formed at night and nourishes the soil beneath, while during the day it refracts sunlight to prevent water evaporation.
Wind shields (Zocos): To prevent harsh and drying winds blowing from the Atlantic Ocean from damaging delicate vines, protective walls in the shape of a half moon are built around the pits from volcanic stones.
