Instructions
In a saucepan, combine the sugar and water over medium heat, stirring until the sugar completely dissolves. Allow the mixture to boil gently until it reaches the soft ball stage (about 235°F or 112°C).
While the sugar syrup is boiling, sift the flour into a separate bowl and add a pinch of salt.
Slowly add the hot sugar syrup to the flour while stirring continuously with a wooden spoon. Be cautious, as the sugar syrup will be extremely hot.
Once the mixture is well combined, add the vanilla extract or rose water if desired, for a fragrant touch.
Transfer the mixture to a clean, dry surface. Using your hands, pull and stretch the dough vigorously until it becomes light and fluffy. This process requires skill and speed to achieve the desired texture.
Continue stretching and pulling the dough until it becomes thin and resembles fine threads, similar to cotton candy.
