Once bread enters the refrigerator, the carbohydrate molecules within it undergo a process called 'retrogradation', or to put it in simpler terms, a 'backward movement'. This causes the molecules in the bread to crystallize.

So, what happens next? The water molecules gradually abandon the bread, leaving the carbohydrate molecules alone. As a result, you're left with bread that stales much faster, losing the fresh taste it had when first purchased. Contrary to the common belief that refrigerators extend the shelf life of food, this situation is quite the opposite for bread.

Storing bread in the refrigerator, in fact, causes it to stale more rapidly.

Certainly, the most practical approach would be to buy only as much bread as you can consume. However, suppose you have an excess of bread at home. Interestingly, your kitchen countertop could be a better choice than the refrigerator for a period of up to 23 days.

You can also wrap the bread in a paper bag or a clean kitchen cloth to maintain the moisture balance. Additionally, bread boxes can regulate air flow, helping the bread stay fresh for a longer period.

Freezing your bread is a healthier option than refrigerating it. When bread is placed in the freezer, the molecules within the bread freeze before they have a chance to crystallize excessively, which somewhat prevents the water molecules from leaving the carbohydrate molecules. Therefore, if you can consume a loaf of bread over an extended period, you might opt to store it in the freezer instead of the refrigerator.

Rest assured, the taste will not change either.
