Ankara played host to the NATO Summit. Intense preparations were made in Ankara ahead of the two-day NATO Summit. Special attention was given to the preparation of the dinner menu to be served to world leaders at Beştepe. Ertuğrul Özkök, who shared details from the Presidential Complex kitchen, reported that the menus had been previously submitted to the Directorate of Communications, and that presentation photos of each dish were shared.

Starter: Taş fırın pide, Trabzon tereyağı ve Hizan Karakovan balı, zeytinyağlı sebze sote ile yanık Denizli yoğurdu
Intermediate Course: Kayseri mantısı, yanık Denizli yoğurdu ve isli Ayaş salçasına yer verildi.
Main Course: Deniz deniz levreği; tarama, Urla sakız enginarı veya Tokat yaprağı ile ağır ateşte pişmiş dana kaburga
Dessert: Sütlü nuriye, Antep fıstığı köpüğü ve Maraş dondurması
It has emerged that the signature dishes at NATO meals are the work of Turkey's renowned chef, Fatih Tutak, who is the first in the country to hold two Michelin stars.
Chef Fatih Tutak, who brought the first two Michelin stars to Turkey, curated the dinner menu for the NATO Summit.
In his article, Ertuğrul Özkök revealed that our two-Michelin-starred chef, Fatih Tutak, was responsible for the first night's meal. However, it wasn't a signature menu of Fatih Tutak; instead, a broad range of Turkish dishes was prepared.
In his conversation with Ertuğrul Özkök, Fatih Tutak shared that Trump was particularly fond of the tandoori beef ribs and eggplant puree, even requesting the recipe to add it to the White House menu. On the other hand, French President Macron and his wife were especially drawn to the 'Urla gum artichokes and Tokat vine sauce salad'. It was even suggested that Macron proposed, 'You should turn this modern Turkish cuisine into a restaurant in Paris'.
So, who are the other leaders who signed at the NATO Summit?

'... On July 7th, in two meetings, my team at Seraf and I presented the deep-rooted heritage of Anatolian cuisine through local products, seasonality, and a modern presentation approach.
We took great pleasure and pride in bringing our approach of making Anatolia's gastronomic memory visible to the diplomatic tables at this special event...'
Chef Sinem Özler's menu featured her own signature dishes.
Kabak çiçeği dolması: Squash blossoms filled with rice cooked in olive oil, dill, fresh mint, and spices.
Baklalı bebek enginar: Fresh baby artichokes and broad beans served with edible herbs.
Seraf içli köfte: Unique to Seraf, a filling made from minced lamb ribs, leg, and brisket, encased in a thin bulgur dough, served with strained yogurt and red pepper sauce.
Dana bonfile: Grilled beef tenderloin accompanied by charred eggplant puree and seasonal vegetables, including grilled lettuce, baby squash, carrots, asparagus, and peas.
Traditional Desserts & Ice Cream: Baklava, semolina halva, and vanilla ice cream.
Osman Sezener, on the other hand, prepared a menu for the First Ladies at the Çankaya Mansion.

Sezener shared his experiences with these words: 'It was a great honor for us to prepare the meals served for the delegation, VIP guests, and press members at the Presidential Complex for four days, in addition to preparing the menu for the First Ladies Program held at the Çankaya Mansion as part of the NATO Leaders Summit. Inspired by Turkey's seven geographical regions, we tried to narrate our country's products, producers, and culinary culture with a contemporary perspective through these menus. We would like to thank everyone who made it possible for us to be a part of this significant task, our entire team who contributed, and the Presidential kitchen staff.'
